Varying seasonal menus at Backby Manor House Restaurant
The seasonal menus are designed on the basis of the changing seasons of the year, from the best ingredients of each season. The masterpieces conjured by Backby’s chef combine carefully selected wines with wonderful flavours.
The seasonal menus are only available by arrangement for a party of at least six people. The whole party must select the same menu option.
Winter menu (valid from 1 December 2021 to 28 February 2022)
Starter
Jerusalem artichoke soup, nutted butter and archipelago bread croutons
Main course
Fried pikeperch fillet, potato fondant, carrot puree, butter and wine sauce, and dill oil
or
Fried duck breast, potato fondant seasoned with thyme, parsnip puree, cranberry gel and red wine sauce
Dessert
Traditional baked cheese, marble chocolate and hot cloudberry sauce
